I find when I’m sad I cook with a lot more butter. Something inside says its time to throw cholesterol and fat grams to the wind and put in as much of the good stuff as possible. I actually normally cook with a lot of butter, so this recipe may be somewhere between crazy and death by scrambled eggs but they were so good. So good on a sad, rainy, devastating Friday night – with buttered toast of course.
8 eggs – lightly scrambled
1 stick of butter – yes the whole thing
as much Kosher salt and fresh ground pepper as you like
Melt the stick of butter first then throw in the eggs and seasoning. No milk, no half n’ half – just eggs and butter. Yum.
